Bread Pudding

A little warming comfort food for those of you who are snowed in. Best served warm with milk.

Bread Pudding

6 slices day old bread
2 tbs. melted butter
handful of raisins (optional)
4 eggs, beaten
2 cups milk
1/2 cup sugar (unrefined or turbinado work well)
1 tsp ground cinnamon
1 tsp. vanilla extract

Heat oven to 350F.Break bread into small pieces and place into an 8x8 baking pan. Drizzle melted butter over bread.  Scatter raisins on top, if using. In a medium bowl, beat eggs.  Add milk, sugar, cinnamon and vanilla, and beat until well mixed.  Pour egg and milk mixture over bread, and push down until bread is covered and soaking up the liquid.  Bake for 45 minutes, or until the pudding puffs up slightly and springs back when lightly tapped.

  1. This yummy post reminds me about how many delicious recipes are actually based on being frugal and using up bread that has gone stale instead of throwing it away. Cheese fondue, french toast, croque monsieur.... Sometimes I end up using perfectly fresh bread to make them! :-) My problem is more what to do - something that is easy and delicious - with left over black bread. So delicious fresh and toasting saves it if it is not too far gone, but....
