Easy Spanish Tapas #vegan

The kids and I enjoyed these quick and easy tapas today:

Olives, roasted red peppers, altramuces (salted yellow beans), salad with lettuce, cucumber, tomato, artichoke and a light vinaigrette dressing, potato crisps, and whole grain bread with olive oil. If you want to get a bit fancier, and have  some nice ripe tomatoes on hand, pan con tomate (bread rubbed with garlic and tomato) would also be a nice addition. 

The potato crisps were perhaps a bit of an indulgence, but I think that a small amount of natural chips (read ingredients: potatoes, oil, salt) adds a nice crunch to the spread and I believe the enjoyment factor outweighs the deep fry.
